Ingredients:
King fish (aka Sear Fish/Surmai) fillet......as required, cut into strips
Lemon juice..............from 1 or 2 lemons, acc to quantity of fish
Semolina (aka suji) to coat the straws
Salt
Pepper
Oil to fry
Dip:
Fresh cilantro (Hara dhania)......a handful or more acc to requirement
Onion.........................a handful chopped or more acc to requirement or taste
Garlic........................2 cloves or more acc to requirement or taste
Green chilli...............acc to desired heat
Salt
Aamchoor (dry mango powder).......acc to taste
Yoghurt....................acc to required quantity or desired ratio
Grind cilantro, onion, garlic, green chilli, salt, aamchoor together in a mixer until it is a fine mixture. Add to yoghurt acc to desired ratio.
Marinate the fillet with lemon juice, salt, pepper. Keep for 20-25 minutes. Cut into 1/2 - 3/4 inch strips. Roll in semolina to coat well.
Before frying the straws, roll each one between the palms to look like pic on the left. Then drop into hot oil. Turn the straws around in the oil. These cook very fast so cut through a straw when the colour begins to change, to check if cooked. Take out from oil and serve with a green chutney dip or with a hot and sweet red chilli sauce.
