Ingredients:
Chicken legs..............................2
Plum Chilli sauce.....................1/2 cup
Ketchup....................................1/4 cup
Vinegar....................................1 tbsp
Soya Sauce..............................1 tbsp
Garlic.....................................2 flakes
Onion.....................................1 chopped small
Red chilli pwdr......................1 tsp or acc to taste
Water.....................................2 cups, or as required. Depends on the fowl being used.
A pinch of salt
Olive oil
Make diagonal cuts on the legs on both sides. Marinate with plum chilli sauce, red chilli and ketchup. Keep for about 20-25 minutes.
Put the marinated legs and marinade in a pan and add the water, garlic, vinegar, soya and a pinch of salt. Cover the pan and boil it until the chicken is tender but not falling off the bone. If the sauce is still runny, reduce by cooking uncovered.
Now put the legs and garlic flakes on a greased baking tray, smear the legs with whatever plum sauce remains in the pan. Sprinkle olive oil over the chicken and grill for 6-7 minutes on each side.
While the chicken is in the oven, brown the chopped onions to a nice crisp brown. You don't want it burnt and bitter!!
When the chicken is done sprinkle with browned onions and serve hot. I teamed these yummy legs with lemon butter corn and olives. Oh yes, and grilled garlic too!
