Fully Loaded Minceloaf




Ingredients:

Mince.........................................500 gms
Onion.........................................1 chopped
Garlic........................................1 tsp crushed
Ginger.......................................1 tsp crushed
Green and red (fresh) chilli......3,or acc to taste. If fresh red chilli isn't available replace with green. Red, adds colour. Don't use red chilli pwdr.
Green coriander.......................a small bunch, chopped
Dill...........................................2 small sprigs chopped
Coriander pwdr.......................1 tsp
Cumin pwdr.............................1 tsp
Garam masala........................a small pinch
Salt
Olive oil

Potatoes................................2 medium, halved, sliced, fried in a non stick pan, minimum oil.
Eggs.....................................2, beaten with sliced onion (1/2 an onion) salt, pepper, mixed dry herbs (a pinch)
Bread..................................6 slices, crusts removed
Butter.................................enough to spread on 4 slices of bread
Cheese slices.....................4, or grated cheese.

For accompaniment:

Cauliflower flowerets, par boiled in salt water, and sauted in butter. Sprinkled with white pepper.



Ingredients for the mince



Drop chopped onions into hot oil and when they turn light brown, add the crushed garlic and ginger, stir into the onions and add the dry spices and salt. Stir around for a few seconds and add the mince. Then add the chopped dill, coriander and chillies. The mince will release water. Let it dry out, then cool the mince and add 2 slices of bread broken into small pieces. Using your hands, mash the bread so it blends well into the mince. Check for salt.


Spread half the mince in an oven-proof dish, and layer with the pan fried potato slices. Butter 4 slices of bread and keep the beaten egg at hand.


Now use the other half of the mince to layer over the potatoes. Place the buttered slices over the mince, with the buttered side face up. If the slices do not fit pat; you can cut and shape to fit. Pour the egg over the bread and spread the onion slices evenly.


Put the dish into the oven and grill (only top burners please, or it will dry the mince) on mark 7 till the top turns brown. Pull out the dish and spread 4 slices of cheese (or grated cheese) on the top, return to oven and bake till the cheese melts.



Enjoy a satisfying meal, full of lovely flavours and textures.
