So I had some left over cooked corn grits which I had boiled for corn bread, and I didn't want to waste it. I also wanted to have something mildly sweet and fruity. I had mangoes, it's summer and the markets are overflowing with the gorgeous fruit! I suppose everyone will have their fridges stocked with some variety or the other. Anyway, I had mangoes and cream, flour, sugar, vanilla, and corn grits!!
Ingredients:
For the pancakes:-
Maida (allpurpose flour)..................................1 n 1/2 cups
Baking powder.................................................1 tsp
Egg..................................................................1, beaten
Sugar..............................................................6-7 tsps
Milk................................................................1 cup
Vanilla essence.............................................a few drops
Corn grits.....................................................4 tbsps, cooked

On a griddle or pan heat a bit of oil and pour a scoop of batter, to make a 4" pancake.
Make sure the pan is not too hot, keep it to a medium heat. The batter will rise and begin to brown. Turn over and cook the other side to a light brown.
When all the pancakes are made, puree the pulp of one mango. If it isn't sweet enough you may add a few teaspoons of castor sugar. Whip up about half a cup of cream. If you want to, you can add a few drops of vanilla to the cream.
Now, when the pancakes have cooled, put a heaped teaspoon of cream in the centre and spread it a wee bit. On top of the cream add a heaped tablespoon of mango puree and using a fork swirl the two around to get a ripple effect.
