Speedy Doubledeckers

Items:

Bread.......................as required @ three slices/sandwich
Butter
Cream cheese
Tomato
Green pepper
Pickled gherkins
Lettuce
Salami or ham
Potatoes
Fruit
Oil for frying



Parboil the potatoes. For this, boil some water in a pan big enough to boil the potatoes. Add salt to it. Peel the potatoes and quarter them lengthwise. When the water is at a full boil, drop them in. Keep for about two minutes or so. Remove, drain out water well and keep aside.
Dice the green pepper, slice the gherkins. Deseed the tomato and dice.
Wash lettuce in cold water and spread on an absorbent kitchen towel.
Now mix the cream cheese, as much as desired, with the chopped veggies.
Butter the slices. Buttering is optional. I butter the bread because if I don't I get hiccups! No joking! The centre slice will be buttered on both sides, while the top and bottom ones only on one side.


On the buttered side of the first slice spread the cheese mixture. Cover with the middle slice which is buttered on both sides.
On top of this layer the salami slices. (I usually use a flavoured salami...olives/pepper/etc) and the finely sliced gherkins. Cover with lettuce leaves. Top with the third slice, of course buttered side down!


Heat the oil and drop in the wedges. Fry until light golden. Drain on a paper towel.



Chop fruit of your choice.

This was a weekday breakfast for two!
