Easy-peasy Apple Muffins




I got this recipe from Divya Srijee, owner of De Cakery in Gurgaon. It is so simple and easy to make you could whip up a batch and have warm muffins for tea without much effort.



Ingredients:
 
Flour.........................1 cup
Baking pwdr.............1 tsp
Butter........................1/2 cup
Eggs..........................3
Sugar........................1/2 cup
Milk..........................2 tbsps.
Cinnamon pwdr.......1/4 tsp
Ripe apples..............2
Vanilla essence........a couple of drops (this is my addition so it's optional)
 
 
Sieve the flour and baking powder together thrice.
Beat the sugar and butter until it is nice and creamy and the colour changes to white.
Add the milk, vanilla essence, add the eggs one by one, beating the mixture until it is frothy.
Peel and cut the apples into small cubes and sprinkle with cinnamon powder.
Add the apple cubes to the mixture and fold in the flour with a lift and fall motion so as not to break the air bubbles.
Put into muffin moulds and bake in a pre-heated oven for 25 minutes at 180 degrees C until the cakes are risen and browned.
Treat yourself to warm muffins with any of the following whipped cream/ice-cream/thick vanilla custard.
