Zucchini-Mince Puff Pastry Pie





Ingredients:

Pre-made Puff pastry
Chicken mince...............250gms (depends on the size of the pie. Alter acc)
Zucchini (green)...........abt 175 gms, chopped into small cubes
Cherry tomatoes...........5, chopped up
Fennel...........................1 tsp
Pepper corns................10-12
Green cardamom..........seeds of 4-5
Onion............................2 tbsps, chopped
Garlic...........................3 cloves, chopped or minced
Ginger..........................1 n 1/2 tsp chopped small
Green coriander..........abt 2 tbsps chopped
Coriander powder.......2 tsps
Salt to taste
Olive oil......................1 n 1/2 tbsp




Crush the fennel, pepper and cardamom seeds in a mortar, to medium coarse. Heat some olive oil in a pan. Drop in the onion and fry till they begin to brown. Put in the garlic and ginger. Stir fry for a minute and add the tomatoes, coriander pwdr, fennel-cardamom-pepper pwdr and stir around allow to cook on medium heat for a couple of minutes and add the mince. Raise heat, and stir the mince and when it changes colour from the cooking add salt, turn down the heat to medium, cover and cook for another couple of minutes then add the chopped zucchini. Check seasoning. Cover. Keep checking and stirring around.Cook till zucchini is done, and there is no liquid wetness in the mince and neither should it be dry and over cooked. Drop in the green coriander and mix it in.

Cut the puff pastry to the desired size acc to your pie dish. Spread the bottom layer in the dish, it should be slightly bigger than the dish and come over the edge. Now put the mince-zucchini mixture in the pan and cover with a top layer of pastry. Pinch the edges, prick a few holes over the top with a fork. decorate with cut outs of pastry bits. Put into the oven and bake till the top starts to brown.
