Fully Loaded Meat Pie






It was cold and I wanted something with meat, vegetables, cheese, hot, crunchy, soft, mildly chewy....and definitely not a stew! The fridge revealed chicken, turkey mince, spinach, corn, cheese and ready to use pie dough already rolled out!! Hallelujah! I had everything to meet my hungry 'wants.'


Ingredients:

Chicken................1 breast, 2 drumsticks
Turkey mince.......500gms
Spinach................abt 400gms
Corn....................1/2 a cup
Cheese................grate enough to cover the top of your pie generously

Note: Alter amounts acc to size of pie being made or number of pies being made. be very careful with the amount of salt you use in each item. It could get too salty if you aren't careful. Do not add any salt to the spinach and corn.


Marinate the chicken with pepper, cumin powder, garam masala and salt. Keep it for 30 - 40 min. Then heat some oil and drop the pieces in. Brown them on the outside on high flame. When done, pour in enough water to cover the pieces, reduce heat to medium and cover the pan and allow to cook.

While that is getting done heat some olive oil in another pan and drop in 2 tablespoons of chopped onions, 1 n 1/2 tsp of finely grated ginger, 1 n 1/2 tsp of finely chopped garlic, 2 tsp coriander pwdr, 10 crushed pepper corns and a bit of salt. Saute and when the onions are light brown add the mince. Cover the pan and allow to cook on low heat. Stir from time to time and check to ensure water content so it doesn't burn. Sprinkle some water if required.

Check on the chicken too. When the water has dried completely, remove chicken and cut chicken meat into strips or you could shred them with your hands, whatever suits you.

Chop the spinach. Defrost the corn if you are using frozen ones. Drain out well if you are using canned ones.

Heat a tsp of olive oil in a pan, drop in 1 tsp of onion. Stir around and drop in the spinach and corn.  Leave the pan open while you stir contents around until the water dries. Remove from fire.

Take a pie dish. Measure out the required size of crust dough. Cut it to size. A bigger round for the bottom, a smaller one for the top.

Layer the filling with the different items at hand. First the mince, then the spinach and corn. Now chicken strips and so on. Right on top spread the grated cheese. Now cover with the top cover of pie dough. Pinch the edges so it is sealed. With the left over cuttings, shape some leaves or petals and decorate the top.



Pop into an oven and bake. When the crust begins to brown take out and serve hot!
