Bhindi (Okra) Masala

That was what my planner popped up at me. I was short on time, not feeling too well and I could have cut it down to just one thing: Palak-dal or Bhindi masala. But I like both. So I just went ahead and made both. It didn't take much time or energy. The Palak (spinach)-dal will be uploaded under dals very soon.


Ingredients:

Bhindi (ladies finger or okra)..........abt 250 - 300gms
Coriander pwdr...............................2 tsps
Red chilli..........................................1/2 tsp or acc to taste
Aamchoor.........................................3/4 tsp this is dry mango powder
Turmeric...........................................1/5 tsp 
Garlic (optional)...............................2 flakes (big variety)
Cumin seeds......................................3/4 tsp.
Salt
Olive oil


Wash the bhindi/okra/ladies finger and cut off the tops and tails. Then slit them down the centre without cutting through to the other side. Make sure to look inside, there could be some creepy residents!


Measure out the spices. There are four in powder form.


Chop the garlic and measure out the cumin seeds.


Add the dry spices to the slit bhindi and mix it well rubbing the spices in with your hands.


Heat oil 4-5 tbsps (tablespoons) and drop in the cumin seeds. When light brown add the garlic and fry it to a pale brown.


Now put in the bhindi. And stir into the oil. With a tablespoon of water make a masala rinse by swirling the water in the container the bhindi was spiced in. Add it.


Do not cover the pan. This cooks in an open pan on medium heat. Keep stirring from time to time. The following pictures show you the process. It gets done very quickly.
